Roasted Beef Grilled Cheese Sandwiches

We've taken your typical grilled cheese and elevated it to the next level. Made with garlic thyme butter to toast the bread and white cheddar and Gouda cheese.

Roasted Beef Grilled Cheese Sandwiches

Ingredients

  • ½ cup salted butter, softened
  • 1 clove garlic, finely chopped
  • 1 tsp dried thyme, crumbled
  • 1 loaf French bread
  • 3 tbsp Dijon Mustard
  • 200 g sliced deli roast beef
  • 14 slices aged white cheddar cheese
  • 7 slices deli smoked Gouda cheese

Directions

  1. Preheat oven to 425°F.
  2. Stir butter, garlic and thyme together in a small bowl.
  3. Slice bread into 16 slices; discard end pieces.
  4. Spread butter mixture on half of the bread slices. Spread other half with Dijon mustard. Top Dijon mustard slices with beef, 2 slices of cheddar cheese, Gouda cheese and buttered slices of bread, buttered side up.
  5. Heat a frypan over medium heat. Working in batches, brown both sides of each sandwich, about 3 minutes per side.
  6. Transfer to a baking sheet. Bake until heated through and cheese is melted, about 5 – 7 minutes.
