ROASTED PARSNIPS WITH MAPLE

Maple syrup adds a lovely flavour to these oil-roasted parsnips.

Yield: Serves 4 - 6.

ROASTED PARSNIPS WITH MAPLE

Ingredients

  • 3 large parsnips, peeled
  • 1 tbsp oil
  • 1/2 tsp salt
  • 1/4 tsp freshly ground pepper
  • 1 tbsp maple syrup

Directions

  1. Grease a rimmed baking sheet or line with nonstick foil.
  2. Cut each parsnip into finger-size pieces. There should be about 5 cups parsnip pieces.
  3. Combine oil, salt and pepper in a bowl. Add parsnips and toss until coated.
  4. Place parsnips in a single layer in prepared pan.
  5. Bake, uncovered, at 450ºF, stirring occasionally, for 25 - 30 minutes or until parsnips are tender and browned.
  6. Drizzle with syrup and stir to coat.
