Rosy Rhubarb Compote
Ingredients
- 1 cup granulated sugar
- 1/4 cup water
- 2 tbsp liquid honey
- 1 tsp grated orange peel
- 2 1/2 cups rhubarb pieces (1/2 inch)
- Fresh strawberries, optional *
Directions
- Combine sugar, water, honey and orange peel in a saucepan. Bring to a boil and simmer 6 minutes.
- Add rhubarb and return to a boil over medium-high heat. Simmer 3 minutes or until rhubarb pieces are soft but still whole. Chill.
- Garnish each serving with a few fresh strawberries.
