Rosy Rhubarb Compote

Made with a few ingredients, we added a hint of orange to this delicious rhubarb compote. Use as a fruit dessert, a topping on vanilla ice cream, or on waffles or pancakes at your next brunch

Yield: Makes about 1 3/4 cups

Rosy Rhubarb Compote


  • 1 cup granulated sugar
  • 1/4 cup water
  • 2 tbsp liquid honey
  • 1 tsp grated orange peel
  • 2 1/2 cups rhubarb pieces (1/2 inch)
  • Fresh strawberries, optional *


  1. Combine sugar, water, honey and orange peel in a saucepan. Bring to a boil and simmer 6 minutes.
  2. Add rhubarb and return to a boil over medium-high heat. Simmer 3 minutes or until rhubarb pieces are soft but still whole. Chill.
  3. Garnish each serving with a few fresh strawberries.
