SAUCY CARAMEL PUDDING CAKE

This dessert separates during baking to create a sauce-like caramel pudding underneath the spongy cake.

SAUCY CARAMEL PUDDING CAKE

Ingredients

  • 1 cup all-purpose flour
  • 3/4 cup packed golden brown sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 cups water
  • 3/4 cup packed golden brown sugar
  • 2 tbsp salted butter
  • 1/2 cup milk (2%)
  • 1 tbsp salted butter, melted
  • 1 tsp vanilla

Directions

  1. Preheat oven to 350°F.
  2. Combine flour, 3/4 cup brown sugar, baking powder and salt in a bowl; set aside.
  3. To prepare caramel sauce, combine water, 3/4 cup brown sugar and butter in a large saucepan. Bring to a boil over medium heat, stirring to dissolve brown sugar. Remove from heat; keep warm.
  4. Whisk together milk, melted butter and vanilla; stir into flour mixture just until blended. Spoon batter into a greased deep 2 quart casserole dish. Gently ladle caramel sauce over batter in casserole dish.
  5. Bake until cake tester inserted in centre comes out clean, about 40 - 45 minutes. Serve warm.
