Savoury Cottage Cheese Bread
Ingredients
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 tbsp granulated sugar
- 2 tsp baking powder
- 1 tsp dill weed
- 1 tsp dry mustard
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup freshly grated Asiago cheese
- 3/4 cup thinly sliced green onions
- 1/2 cup pepitas
- 1 cup cottage cheese
- 1/2 cup milk (2%)
- 1/4 cup salted butter, melted
- 2 large eggs
Directions
- Preheat oven to 350ºF. Combine first 8 ingredients (flour through salt) in a bowl. Stir in Asiago cheese, green onions and pepitas; set aside.
- Place cottage cheese, milk, melted butter and eggs in a blender; puree until smooth. Add cottage cheese mixture to flour mixture and stir just until combined. Do not overmix. Spoon batter into a greased 9x5 inch loaf pan.
- Bake for 40 - 45 minutes or until a cake tester inserted in centre comes out clean. Cool in pan on a rack for 10 minutes. Invert loaf onto rack and cool completely. May be frozen.

Tip: Pepitas are pumpkin seeds with their white hulls removed. They are dark green in colour and found in most grocery stores.
