SESAME PEA SALAD

This unique side salad is comprised of blanched snap peas, frozen green peas, almonds and an Asian-inspired sesame soy dressing.

Yield: Serves 6.

SESAME PEA SALAD

Ingredients

  • 2 pkgs (8 oz/227 g each) sugar snap peas
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp packed golden brown sugar
  • 1/2 tsp salt
  • 1/2 tsp freshly ground pepper
  • 3 cups frozen green peas, thawed
  • 2 tbsp toasted slivered almonds

Directions

  1. Cook sugar snap peas in boiling salted water for 30 seconds; drain. Cool immediately in ice water; drain.
  2. To prepare dressing, whisk together vinegar, soy sauce, oil, brown sugar, salt and pepper until blended.
  3. Combine sugar snap peas and green peas in a bowl. Add dressing and toss to combine. Sprinkle with almonds.
