SHRIMP COCKTAIL WITH BRANDIED REMOULADE SAUCE

Remoulade sauce is a mayonnaise-based condiment commonly used in Cajun cuisine. Served this homemade brandy-spiked version with cooked baby shrimp.

SHRIMP COCKTAIL WITH BRANDIED REMOULADE SAUCE

Ingredients

  • 1 cup mayonnaise
  • 1/3 cup ketchup
  • 1/4 cup brandy
  • 1 tbsp fresh lime juice
  • 1 tsp granulated sugar
  • 1/4 tsp dry mustard
  • 1/8 tsp cayenne pepper
  • 4 cups shredded lettuce
  • 1 1/4 lb (625 g) cooked baby shrimp

Directions

  1. To prepare sauce, combine all ingredients except lettuce and shrimp until blended. Cover and refrigerate until serving or for up to 24 hours.
  2. For each serving, place 1/2 cup shredded lettuce in a champagne or sherbet glass or on a small plate. Top each with shrimp and sauce.
