Remoulade sauce is a mayonnaise-based condiment commonly used in Cajun cuisine. Served this homemade brandy-spiked version with cooked baby shrimp.

SHRIMP COCKTAIL WITH BRANDIED REMOULADE SAUCE
Ingredients
- 1 cup mayonnaise
- 1/3 cup ketchup
- 1/4 cup brandy
- 1 tbsp fresh lime juice
- 1 tsp granulated sugar
- 1/4 tsp dry mustard
- 1/8 tsp cayenne pepper
- 4 cups shredded lettuce
- 1 1/4 lb (625 g) cooked baby shrimp
Directions
- To prepare sauce, combine all ingredients except lettuce and shrimp until blended. Cover and refrigerate until serving or for up to 24 hours.
- For each serving, place 1/2 cup shredded lettuce in a champagne or sherbet glass or on a small plate. Top each with shrimp and sauce.
