SHRIMP AND GOAT CHEESE TARTS
Use our Cream Cheese Pastry to make these delicate hors d’oeuvres. They’re filled with a creamy blend of basil, cooked shrimp and goat cheese.

SHRIMP AND GOAT CHEESE TARTS
            Ingredients
- 2 large eggs
 - 1 cup light cream (10%)
 - 1 tsp basil, crumbled
 - 1/8 tsp hot pepper sauce
 - 1 1/3 cups chopped cooked small shrimp
 - 5 oz (150 g) soft goat cheese, crumbled
 - 48 tart shells from Cream Cheese Pastry
 
Directions
- Preheat oven to 375°F.
 - To prepare filling, whisk together eggs, cream, basil and hot pepper sauce until blended. Stir in shrimp and cheese. Spoon a scant 2 tsp of filling into each tart shell.
 - Bake until filling is set and pastry is golden, about 20 minutes. Cool in pans for 5 minutes. Serve warm. Baked tarts may be cooled completely and frozen for up to 1 month.

CREAM CHEESE PASTRY
            
            Ingredients
- 1 cup salted butter, softened
 - 8 oz (250 g) cream cheese, softened
 - 2 tbsp milk (2%)
 - 2 1/2 cups all-purpose flour
 - 1/4 tsp salt
 
Yield: Makes 24 unbaked tart shells.
Directions
- Place butter, cream cheese and milk in a food processor. Process until well blended. Add flour and salt. Process, using an on/off motion, just until mixture starts to come together.
 - Gather dough into a ball. Wrap dough in plastic wrap and refrigerate for 2 hours or until firm.
 - Shape dough into 1 inch balls. Press each ball into a mini muffin cup to form a tart shell.
