Simple Coconut Rice

Simply jazz up your rice with coconut milk and give it a slightly sweet tropical flavour.

Yield: Serves 8

Simple Coconut Rice


  • 2 cups long grain rice or jasmine rice
  • 2 3/4 cups water
  • 1 can (400 mL) coconut milk
  • 1 tsp salt


  1. Combine rice, water, coconut milk and salt in a large saucepan. Bring to a boil over medium heat. Reduce heat and simmer, covered, for 20 minutes or until liquid is absorbed and rice is tender.
