SIMPLE TOMATO PASTA

Pasta doesn’t have to be complicated to be delicious! These long noodles are topped with a simple mixture of tomato, basil, garlic and a little bit of seasoning.

Yield: Serves 4.

SIMPLE TOMATO PASTA

Ingredients

  • 2 cloves garlic, crushed
  • 1 tsp water
  • 2 tbsp olive oil
  • 1 can (28 oz/796 mL) diced tomatoes
  • 1/4 tsp freshly ground pepper
  • 3 tbsp chopped fresh basil
  • 1/4 tsp sugar
  • 1/2 tsp salt
  • 12 oz linguine or spaghetti
  • Grated Parmesan cheese

Directions

  1. Combine garlic and water. Heat oil in a frypan.
  2. Add garlic mixture and sauté 2 minutes; do not brown. Stir in tomatoes and pepper; simmer until slightly thickened, about 10 - 15 minutes.
  3. Stir in basil, sugar and salt. Meanwhile, cook pasta according to package directions.
  4. Drain, reserving 1/4 cup cooking liquid. Stir cooking liquid into sauce.
  5. Toss pasta with sauce. Serve with Parmesan cheese.
