SLOW COOKER COWBOY BEANS

This big-batch bean recipe is a snap to do in the slow cooker. These classic cowboy beans are cooked in a sticky mix of barbecue sauce, mustard, chipotle pepper sauce and bacon.

Yield: Serves 10.

SLOW COOKER COWBOY BEANS

Ingredients

  • 4 cans (19 oz/540 mL each) mixed beans, rinsed and drained
  • 1 1/4 cups ketchup
  • 1 cup chopped onion
  • 1/2 cup water
  • 1/4 cup barbecue sauce
  • 1/4 cup packed golden brown sugar
  • 1 tbsp prepared mustard
  • 1 tbsp Worcestershire sauce
  • 1 1/2 tsp chili powder
  • 1/2 tsp chipotle pepper sauce
  • 4 slices bacon, julienned and cooked crisp
  • 2 cloves garlic, finely chopped

Directions

  1. Combine all ingredients in a 5 quart slow cooker. Cover and cook on high heat setting until piping hot and thickened, about 3 1/2 – 4 hours.
