SLOW COOKER SCALLOPED POTATOES

Scalloped potatoes cook up wonderfully in the slow cooker. This is a great way to make this classic side dish when your oven is occupied by a big roast.

Yield: Serves 8.

SLOW COOKER SCALLOPED POTATOES

Ingredients

  • 1/4 cup salted butter
  • 1 cup finely chopped onion
  • 1/4 cup all-purpose flour
  • 1 tsp salt
  • 1/4 tsp dry mustard
  • 1/8 tsp cayenne pepper
  • Pinch freshly ground nutmeg
  • 2 cups homogenized milk
  • 8 cups thinly sliced peeled red potatoes
  • 1/2 cup shredded cheddar cheese
  • Paprika

Directions

  1. To prepare sauce, melt butter in a saucepan over medium heat. Add onion and sauté for 5 minutes. Stir in flour, salt, mustard, cayenne pepper and nutmeg; cook for 1 minute, stirring constantly. Gradually stir in milk; cook, stirring constantly, until thickened.
  2. Place potatoes in a slow cooker. Pour sauce over potatoes and gently stir to coat potatoes with sauce.
  3. Cover and cook on high heat setting until potatoes are tender, about 3 - 4 hours. Sprinkle with cheese and paprika. Cover and cook for 5 minutes or until cheese is melted.
