SMOKED GOUDA AND CARAMELIZED ONION QUESADILLAS

These pan-fried quesadillas are stuffed with onions that have been caramelized in brown sugar and vinegar and delicious smoked Gouda cheese. Serve them as a rich lunch entrée or a pre-dinner appetizer.

Yield: Serves 6.

SMOKED GOUDA AND CARAMELIZED ONION QUESADILLAS

Ingredients

  • 2 tbsp salted butter
  • 2 cups thinly sliced onions
  • 1 tbsp packed brown sugar
  • 1/4 tsp raspberry or red wine vinegar
  • 1 1/2 cups shredded smoked Gouda cheese
  • 8 flour tortillas (8 inch)
  • Freshly ground pepper
  • 1 tbsp salted butter

Directions

  1. Melt 2 tbsp butter in a medium frypan over low heat. Add onions, brown sugar and vinegar; cook, stirring frequently, until onions are golden brown, about 25 minutes. Remove from heat and cool completely.
  2. Meanwhile, preheat oven to 350°F.
  3. Combine onion mixture and cheese in a bowl. Spread mixture evenly over one side of 4 tortillas, leaving a 1/4 inch border. Sprinkle with pepper. Cover with remaining 4 tortillas.
  4. Melt 1 tsp butter in a medium frypan. Cook quesadillas, one at a time, adding remaining butter as necessary, until lightly browned, about 2 minutes per side. Transfer quesadillas to cookie sheets.
  5. Bake until heated through, about 5 minutes. Cut into wedges.
