SOUTHWESTERN BEAN SALAD
The southwestern flavour of this bean salad comes from lime juice, hot pepper jelly, chili powder and cilantro. Serve it as a side dish at your next barbecue.

SOUTHWESTERN BEAN SALAD
Ingredients
- 2 tbsp fresh lime juice
- 1 tbsp red pepper jelly
- 1 tsp chili powder
- 1/2 tsp salt
- 1/8 tsp hot pepper sauce
- 1/4 cup canola oil
- 2 cans (19 oz/540 mL each) Romano beans, rinsed and drained
- 1 cup sliced celery
- 1 cup diced green bell pepper
- 1 cup diced red bell pepper
- 1/2 cup thinly sliced green onions
- 2 tbsp chopped fresh cilantro
Directions
- To prepare dressing, whisk together lime juice, red pepper jelly, chili powder, salt and hot pepper sauce. Gradually whisk in oil until blended.
- Combine remaining ingredients in a bowl. Add dressing and toss to combine.
