SOUTHWESTERN TOSSED SALAD

This mixed green salad is packed with fresh veggies. The southwestern flavour comes from a creamy mayo-based salsa dressing.

SOUTHWESTERN TOSSED SALAD

Ingredients

  • 3/4 cup light mayonnaise
  • 3/4 cup medium salsa
  • 2 tbsp fresh lemon juice
  • 1/4 cup chopped fresh parsley
  • 1/8 tsp freshly ground pepper
  • 8 cups torn mixed greens
  • 2 tomatoes, cut into small wedges
  • 2 cups cubed cucumber
  • 1 cup sliced fresh mushrooms, optional
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1/2 cup sliced green onions

Directions

  1. To prepare dressing, whisk together mayonnaise, salsa, lemon juice, parsley and pepper.
  2. Combine mixed greens, tomatoes, cucumber, mushrooms, green pepper, red pepper and green onions in a large bowl. Add dressing and toss to coat. Serve immediately.
