SOUTHWESTERN TOSSED SALAD
This mixed green salad is packed with fresh veggies. The southwestern flavour comes from a creamy mayo-based salsa dressing.

SOUTHWESTERN TOSSED SALAD
Ingredients
- 3/4 cup light mayonnaise
- 3/4 cup medium salsa
- 2 tbsp fresh lemon juice
- 1/4 cup chopped fresh parsley
- 1/8 tsp freshly ground pepper
- 8 cups torn mixed greens
- 2 tomatoes, cut into small wedges
- 2 cups cubed cucumber
- 1 cup sliced fresh mushrooms, optional
- 1 green bell pepper, thinly sliced
- 1 red bell pepper, thinly sliced
- 1/2 cup sliced green onions
Directions
- To prepare dressing, whisk together mayonnaise, salsa, lemon juice, parsley and pepper.
- Combine mixed greens, tomatoes, cucumber, mushrooms, green pepper, red pepper and green onions in a large bowl. Add dressing and toss to coat. Serve immediately.
