Souvlaki is a popular Greek dish consisting of marinated meat skewers. Keep some of this seasoning mix on hand for times when you want to whip up a few skewers.

Yield: Makes 1/4 cup.



  • 2 tbsp oregano, crumbled
  • 2 tbsp paprika
  • 2 tsp thyme, crumbled
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp freshly ground pepper


  1. Combine all ingredients. Store in an airtight container in a cool dry place.
  2. Stir Souvlaki Seasoning Mix before using.
  3. To prepare marinade, combine 1 tbsp seasoning mix, 2 tbsp fresh lemon juice and 2 tbsp extra-virgin olive oil in a heavy zip-lock plastic bag. Add cubed meat (pork, lamb or chicken) and squeeze bag to coat meat with marinade. Seal bag and place on a plate. Refrigerate, turning bag occasionally, for up to 24 hours.
  4. Soak bamboo skewers in hot water for 30 minutes. Meanwhile, preheat natural gas barbecue on medium heat for 10 - 15 minutes.
  5. Remove meat from marinade; discard marinade. Thread meat onto soaked skewers.
  6. Grill souvlaki skewers until meat is done.
