Spiced Coconut Marinade

Marinades help to infuse lots of flavours into food. For something new, try our Spiced Coconut Marinade which combines the sweetness of coconut milk with the warmth of spices such as coriander, cumin, turmeric, and cayenne pepper to create a delicious contrast in flavours.

Yield: Makes about 3/4 cup

Spiced Coconut Marinade


  • 1/2 cup well-stirred canned coconut milk
  • 1/4 cup finely chopped onion
  • 1 tsp dry mustard
  • 3/4 tsp ground coriander
  • 1/4 tsp ground cumin
  • 1/4 tsp turmeric
  • 1/4 tsp salt
  • 1/8 tsp cayenne pepper
  • 1 clove garlic, crushed


  1. Combine all ingredients.
  2. Use to marinate chicken, fish, or seafood.
  3. Allow fish and seafood to marinate for up to 30 minutes in the fridge; allow chicken to marinate for up to 24 hours in the fridge.
  4. Discard marinade after use.
