This homemade pancake mix is spiced with cinnamon, ginger and cloves. Divide it into portions to give out as holiday gifts.

Yield: Makes 8 cups.



  • ​6 cups all-purpose flour
  • 3 cups skim milk powder
  • 1/3 cup granulated sugar
  • 1/4 cup baking powder
  • 2 tbsp cinnamon
  • 1 tbsp ground ginger
  • 1 tbsp salt
  • 1 tsp ground cloves


  1. Combine all ingredients.
  2. Store in an airtight container in a cool dry place for up to 1 month. May be frozen.
  3. To Make Spiced Pancakes: Place 2 cups mix in a bowl.
  4. Whisk together 1 1/4 cups water, 1 large egg and 1 tbsp cooled melted salted butter until blended. Add water mixture to mix and stir just until combined. Do not overmix.
  5. Using 1/4 cup batter for each pancake, spoon batter, spreading lightly, onto a lightly greased griddle or frypan over medium heat; cook pancakes until golden brown, about 1 - 2 minutes per side.
