SPICY POTATO WEDGES

These baked potato wedges are coated in a spicy blend of paprika, coriander, cayenne and other spices. Serve them with steak or other grilled or roasted meat.

Yield: Serves 4.

SPICY POTATO WEDGES

Ingredients

  • 4 large baking potatoes
  • 1/4 cup canola oil
  • 2 cloves garlic, bruised
  • 1 tbsp paprika
  • 1 tsp ground coriander
  • 1 tsp ground allspice
  • 1/4 tsp cayenne pepper
  • 1/4 tsp salt
  • 1/4 tsp freshly ground pepper

Directions

  1. Preheat oven to 400°F.
  2. Cut each potato lengthwise into 8 wedges. Combine remaining ingredients in a heavy plastic bag. Add potatoes and squeeze bag to coat potatoes with seasoning mixture. Remove potatoes from bag and place in a single layer on a greased rimmed baking sheet.
  3. Bake, stirring occasionally, until potatoes are browned and crisp, about 40 - 45 minutes.
