SPICY TEXAS STEAK

Give your barbecued steak the Texas treatment with a rub made of dry mustard, chili pepper, thyme and other spices.

Yield: Serves 4.

SPICY TEXAS STEAK

Ingredients

  • 2 cloves garlic, crushed
  • 1 1/2 tsp freshly ground pepper
  • 1 tsp chili powder
  • 1 tsp dry mustard
  • 1 tsp paprika
  • 1/2 tsp thyme, crumbled
  • 1/4 tsp salt
  • 1/4 - 1/2 tsp cayenne pepper
  • 1 1/4 lb (.625 kg) sirloin or round steak, 1 inch thick
  • 1 tbsp canola oil

Directions

  1. To prepare rub, combine garlic, pepper, chili powder, mustard, paprika, thyme, salt and cayenne pepper; set aside.
  2. Preheat natural gas barbecue on medium heat for 10 - 15 minutes.
  3. Meanwhile, brush steak with oil. Spread rub over both sides of steak. Let stand 10 - 15 minutes.
  4. Grill steak to desired doneness.
