Spinach Salad with Oranges and Almonds

This delicious, simple salad will soon become a weekly meal. Top with grilled chicken and you have a nutritious lunch! No spinach? No problem, substitute the spinach for romaine lettuce.

Spinach Salad with Oranges and Almonds

Ingredients

  • 1/4 cup oil
  • 1/4 cup white wine vinegar
  • 1 tsp sugar
  • 1/2 tsp dry mustard
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 8 cups torn spinach
  • 3 green onions, diagonally sliced
  • 2 oranges, peeled and sliced
  • 1/3 cup toasted almonds

Directions

  1. To prepare dressing, whisk together oil, vinegar, sugar, mustard, salt and pepper.
  2. Just before serving, combine, spinach, onions, oranges, and almonds; toss with dressing.
