Spinach Salad with Oranges and Almonds
This delicious, simple salad will soon become a weekly meal. Top with grilled chicken and you have a nutritious lunch! No spinach? No problem, substitute the spinach for romaine lettuce.

Spinach Salad with Oranges and Almonds
Ingredients
- 1/4 cup oil
- 1/4 cup white wine vinegar
- 1 tsp sugar
- 1/2 tsp dry mustard
- 1/8 tsp salt
- 1/8 tsp pepper
- 8 cups torn spinach
- 3 green onions, diagonally sliced
- 2 oranges, peeled and sliced
- 1/3 cup toasted almonds
Directions
- To prepare dressing, whisk together oil, vinegar, sugar, mustard, salt and pepper.
- Just before serving, combine, spinach, onions, oranges, and almonds; toss with dressing.
