SPIRITED ORANGE CHICKEN WITH CRANBERRIES

This unique dinner entrée is flavoured with orange and dried cranberries. The “spirited” part comes in the form of orange liqueur.

Yield: Serves 6.

SPIRITED ORANGE CHICKEN WITH CRANBERRIES

Ingredients

  • 1/3 cup all-purpsoe flour
  • 1/2 tsp salt
  • 1/4 tsp freshly ground pepper
  • 1/4 tsp paprika
  • 6 boneless skinless chicken breasts
  • 1 tbsp salted butter
  • 1 tbsp canola oil
  • 3/4 cup fresh orange juice
  • 1/4 cup orange liqueur
  • 1/2 cup dried cranberries
  • 1/4 cup thinly sliced green onion

Directions

  1. Combine flour, salt, pepper and paprika in a large plastic bag. Add chicken to flour mixture and toss to coat.
  2. Melt butter with oil in a large frypan over medium heat. Add chicken and brown on both sides. Add orange juice, liqueur and cranberries; stir to combine. Bring to a boil.
  3. Reduce heat and simmer, covered, until chicken is cooked through and pan sauce is thickened, about 15 - 20 minutes. Sprinkle with green onion.
