SPIRITED ORANGE CHICKEN WITH CRANBERRIES
Ingredients
- 1/3 cup all-purpose flour
- 1/2 tsp salt
- 1/4 tsp freshly ground pepper
- 1/4 tsp paprika
- 6 boneless skinless chicken breasts
- 1 tbsp salted butter
- 1 tbsp canola oil
- 3/4 cup fresh orange juice
- 1/4 cup orange liqueur
- 1/2 cup dried cranberries
- 1/4 cup thinly sliced green onion
Directions
- Combine flour, salt, pepper and paprika in a large plastic bag. Add chicken to flour mixture and toss to coat.
- Melt butter with oil in a large frypan over medium heat. Add chicken and brown on both sides. Add orange juice, liqueur and cranberries; stir to combine. Bring to a boil.
- Reduce heat and simmer, covered, until chicken is cooked through and pan sauce is thickened, about 15 - 20 minutes. Sprinkle with green onion.
