Steak with Blue Cheese Butter

We topped these tender sirloin steaks with savoury blue cheese butter. Serve this impressive steak at your next backyard barbecue.

Steak with Blue Cheese Butter

Ingredients

  • 1 tbsp chopped fresh parsley
  • 1 tbsp olive oil
  • 2 tsp chopped fresh rosemary (or 1/2 tsp dried rosemary, crumbled)
  • 1 1/2 tsp freshly ground pepper
  • 3 lb (1.4 kg) sirloin steak
  • Blue Cheese Butter (recipe follows)

Directions

  1. Combine parsley, olive oil, rosemary and pepper; rub over all sides of sirloin steak. Cover and let stand for 30 minutes at room temperature.
  2. Preheat natural gas barbecue on medium heat.
  3. Grill steak over medium heat to desired doneness. Let stand for 5 minutes.
  4. Cut into thick slices and serve with Blue Cheese Butter.

Blue Cheese Butter

Ingredients

  • 1/2 cup crumbled blue cheese
  • 1/4 cup salted butter, softened
  • 2 tbsp chopped fresh parsley
  • 2 tsp chopped fresh rosemary
  • 1/4 tsp freshly ground pepper
  • 1/4 cup toasted, chopped walnuts, optional

Yield: Makes about 1 cup

Directions

  1. Stir together blue cheese, butter, parsley, rosemary and pepper.
  2. Mix in walnuts. Cover and refrigerate for up to 2 days. May be frozen.
