STRAWBERRY PINEAPPLE FREEZER JAM

Freezer jams are a quick and easy way to preserve your favourite summer fruit, we combined pineapple with strawberries for a tropical twist.
 

 

Yield: Makes 6 cups

STRAWBERRY PINEAPPLE FREEZER JAM

Ingredients

  • 2 cups crushed ripe strawberries (about 4 cups whole strawberries)
  • 1/2 cup crushed pineapple, with juice
  • 4 1/2 cups granulated sugar
  • 1/4 cup lemon juice
  • 1 pouch liquid fruit pectin

Directions

  1. Thoroughly combine strawberries, pineapple with juice in a bowl. Stir in sugar; mix well and let stand 10 minutes.
  2. Combine lemon juice and pectin in a small bowl. Stir pectin into fruit mixture and continue to stir for 3 minutes until sugar is dissolved. A few sugar crystals may remain.
  3. Ladle into freezer containers. Cover and let stand at room temperature until set, up to 24 hours. Store in freezer for up to one year or refrigerator for up to 3 weeks.
