Super Greens with Blueberry Vinaigrette
Packed with herbs, dark greens and fruit, this salad is great for healthy eating. Did we mention its also super delicious?!

Super Greens with Blueberry Vinaigrette
Ingredients
- 1 cup fresh blueberries, divided
- 1/4 cup canola oil
- 2 tbsp apple cider vinegar
- 1 tsp liquid honey
- 1/4 tsp salt
- 1/4 tsp freshly ground pepper
- 4 cups arugula
- 4 cups baby kale
- 2 cups sliced English cucumber (¼ inch)
- 3/4 cup shredded carrot
- 1/2 cup crumbled soft goat cheese, divided
- 1/2 cup coarsely chopped pecans, divided
- 1/4 cup roughly chopped basil leaves
- 2 tbsp roughly chopped mint leaves
Directions
- To make dressing, combine 3/4 cup blueberries, oil, vinegar, honey, salt and pepper in a mini food processor and purée until smooth.
- Combine arugula, kale, cucumber, carrot, 1/4 cup cheese, 1/4 cup pecans, basil and mint in a large bowl. Drizzle with dressing and toss to combine. Top salad with remaining blueberries, cheese and pecans. Serve immediately.
