THAI CUCUMBER SALAD

This refreshing cucumber salad is flavoured with lime, ginger, red pepper flakes and fresh basil. Serve it alongside a homemade Thai meal.

THAI CUCUMBER SALAD

Ingredients

  • 1/4 cup rice vinegar
  • 2 tsp granulated sugar
  • 1/2 tsp grated lime peel
  • 1/2 tsp grated fresh ginger
  • 1/2 tsp salt
  • 1/4 tsp red pepper flakes
  • 3 cups seeded English cucumber slices, 1/4 inch thick
  • 2 tbsp slivered fresh basil

Directions

  1. To prepare dressing, whisk together vinegar, sugar, lime peel, ginger, salt and red pepper flakes until combined.
  2. Combine cucumber and basil in a bowl. Add dressing and toss to coat. Serve immediately.
