Tofu Scramble
This delicious and colourful vegetarian breakfast recipe comes together quickly and makes a great weeknight meal on a busy day.

Tofu Scramble
            Ingredients
- 1 pkg (350 g) extra-firm tofu
 - 1 tbsp canola oil
 - 1/2 cup chopped red bell pepper
 - 1/2 cup chopped green bell pepper
 - 1/2 cup sliced mushrooms
 - 1/2 cup sliced green onions
 - 1/4 tsp turmeric
 - 1/4 tsp garlic powder
 - 1/4 tsp salt
 - 1/4 tsp freshly ground pepper
 - 1/2 cup shredded cheddar cheese
 
Directions
- Place tofu on a plate lined with several layers of paper towels. Place several more layers of paper towels on top of tofu. Set another plate on top. Let stand for 10 minutes.
 - Remove plate and paper towels from tofu. Coarsely crumble tofu; set aside.
 - Heat oil in a large frypan over medium heat.
 - dd bell peppers; sauté for 1 minute. Add mushrooms and green onions; sauté for 1 minute.
 - Add tofu; cook, stirring, until tofu is heated through, about 5 minutes.
 - Add turmeric, garlic powder, salt, and pepper; cook, stirring, for 1 minute.
 - Sprinkle cheese on top. Cook, stirring, until cheese is melted, about 1 minute. Serve immediately.
