Tofu Scramble

This delicious and colourful vegetarian breakfast recipe comes together quickly and makes a great weeknight meal on a busy day.

Tofu Scramble


  • 1 pkg (350 g) extra-firm tofu
  • 1 tbsp canola oil
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped green bell pepper
  • 1/2 cup sliced mushrooms
  • 1/2 cup sliced green onions
  • 1/4 tsp turmeric
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp freshly ground pepper
  • 1/2 cup shredded cheddar cheese


  1. Place tofu on a plate lined with several layers of paper towels. Place several more layers of paper towels on top of tofu. Set another plate on top. Let stand for 10 minutes.
  2. Remove plate and paper towels from tofu. Coarsely crumble tofu; set aside.
  3. Heat oil in a large frypan over medium heat.
  4. dd bell peppers; sauté for 1 minute. Add mushrooms and green onions; sauté for 1 minute.
  5. Add tofu; cook, stirring, until tofu is heated through, about 5 minutes.
  6. Add turmeric, garlic powder, salt, and pepper; cook, stirring, for 1 minute.
  7. Sprinkle cheese on top. Cook, stirring, until cheese is melted, about 1 minute. Serve immediately.
