Tomato Chutney with Garam Masala

Garam masala is a spice blend with many variations that is used throughout India. Serve this chutney over cream cheese as a starter or as an accompaniment for lamb.

Tomato Chutney with Garam Masala

Ingredients

  • 1/2 cup packed golden brown sugar
  • 1/3 cup apple cider vinegar
  • 2 tbsp grated fresh ginger
  • 1 tsp garam masala
  • 1/4 tsp salt
  • 1/8 tsp red pepper flakes
  • 2 cloves garlic, crushed
  • 2 cups finely chopped green tomatoes

Directions

  1. Combine all ingredients except green tomatoes in a medium nonreactive saucepan. Bring to a boil over medium heat, stirring to dissolve brown sugar.
  2. Add green tomatoes and bring to a boil, stirring occasionally. Reduce heat and simmer, covered, stirring occasionally, until green tomatoes are softened, about 40 minutes. Uncover and simmer, stirring occasionally, until mixture is thickened and most of liquid is evaporated, about 10 - 15 minutes; cool.
  3. Cover and refrigerate for at least 2 hours or up to 1 week. May be frozen for up to 1 month.
