Turkey Gobbler with Cornmeal Biscuit Topping

The “gobbler” is a main dish turkey cobbler. It’s a different and delicious way to use up some of the leftover turkey from your holiday dinner.

Turkey Gobbler with Cornmeal Biscuit Topping

Ingredients

  • 1/4 cup salted butter
  • 2 tbsp all-purpose flour
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp freshly ground pepper
  • 2 cups chicken broth
  • 2 cups cubed cooked turkey
  • 1/2 cup frozen green peas, thawed
  • 1/2 cup dried cranberries
  • Cornmeal Biscuit Topping (recipe below)

Directions

  1. Preheat oven to 400°F.
  2. Melt butter in a large saucepan over medium heat. Add flour, paprika, salt and pepper; cook, stirring, for 1 minute.
  3. Gradually whisk in broth. Bring to a boil, stirring frequently. Reduce heat and simmer, stirring frequently, until thickened, about 10 minutes.
  4. Stir in turkey, peas and cranberries. Spoon into a greased 9 inch square baking dish.
  5. Prepare Cornmeal Biscuit Topping.
  6. Drop about 9 scoops of biscuit topping evenly on top of turkey mixture.
  7. Bake, uncovered, until a cake tester inserted in centres of biscuits comes out clean, about 30 – 35 minutes. Let stand for 5 minutes before serving.

Cornmeal Biscuit Topping

Ingredients

  • 3/4 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 tsp baking powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp freshly ground pepper
  • 1/4 tsp sage leaves, crumbled
  • 3/4 cup milk (2%)
  • 1/4 cup salted butter, melted
  • 1 large egg, beaten

Directions

  1. Combine flour, cornmeal, baking powder, paprika, salt, pepper and sage in a bowl.
  2. Whisk together milk, melted butter and beaten egg until blended.
  3. Add milk mixture to flour mixture and stir just until combined.
