Turkey Gobbler with Cornmeal Biscuit Topping
Ingredients
- 1/4 cup salted butter
- 2 tbsp all-purpose flour
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp freshly ground pepper
- 2 cups chicken broth
- 2 cups cubed cooked turkey
- 1/2 cup frozen green peas, thawed
- 1/2 cup dried cranberries
- Cornmeal Biscuit Topping (recipe below)
Directions
- Preheat oven to 400°F.
- Melt butter in a large saucepan over medium heat. Add flour, paprika, salt and pepper; cook, stirring, for 1 minute.
- Gradually whisk in broth. Bring to a boil, stirring frequently. Reduce heat and simmer, stirring frequently, until thickened, about 10 minutes.
- Stir in turkey, peas and cranberries. Spoon into a greased 9 inch square baking dish.
- Prepare Cornmeal Biscuit Topping.
- Drop about 9 scoops of biscuit topping evenly on top of turkey mixture.
- Bake, uncovered, until a cake tester inserted in centres of biscuits comes out clean, about 30 – 35 minutes. Let stand for 5 minutes before serving.

Ingredients
- 3/4 cup all-purpose flour
- 1/2 cup cornmeal
- 1 tsp baking powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp freshly ground pepper
- 1/4 tsp sage leaves, crumbled
- 3/4 cup milk (2%)
- 1/4 cup salted butter, melted
- 1 large egg, beaten
Directions
- Combine flour, cornmeal, baking powder, paprika, salt, pepper and sage in a bowl.
- Whisk together milk, melted butter and beaten egg until blended.
- Add milk mixture to flour mixture and stir just until combined.
