TURKEY MEAT LOAF

Lighten up your traditional meatloaf with ground turkey in place of the traditional ground beef. It goes beautifully with our Apple Herb Gravy.

TURKEY MEAT LOAF

Ingredients

  • 3 tbsp salted butter
  • 1 1/2 cups finely chopped celery
  • 1 1/2 cups finely chopped onions
  • 1 cup finely chopped mushrooms
  • 2 cloves garlic, finely chopped
  • 2 tsp poultry seasoning
  • 1 tsp salt
  • 1/2 tsp freshly ground pepper
  • 2 lb (1 kg) ground turkey
  • 1 1/2 cups soft fresh bread crumbs
  • 1/3 cup chopped fresh parsley
  • 2 large eggs, lightly beaten
  • Apple Herb Gravy

Yield: Serves 12.

Directions

  1. Preheat oven to 350°F.
  2. Melt butter in a large frypan over medium heat. Add celery, onions, mushrooms, garlic, poultry seasoning, salt and pepper; sauté until vegetables are softened and liquid is evaporated, about 8 - 10 minutes. Remove from heat and cool to room temperature.
  3. Combine vegetable mixture, turkey, bread crumbs, parsley and beaten eggs until blended. Shape mixture into a 4x12 inch oval loaf in a parchment paper-lined rimmed baking sheet.
  4. Bake, uncovered, until a meat thermometer inserted in centre registers 175°F, about 1 hour. Let stand for 10 minutes before slicing. Serve with Apple Herb Gravy.

APPLE HERB GRAVY

Ingredients

  • 1 1/2 cups chicken broth
  • 1 cup apple juice
  • 1/3 cup salted butter
  • 1/3 cup all-purpose flour
  • 2 tbsp apple cider vinegar
  • 1 tbsp finely chopped fresh parsley
  • 1 tbsp finely chopped fresh sage
  • 1 tbsp finely chopped fresh thyme
  • 1 tsp finely chopped fresh rosemary

Yield: Makes about 2 cups.

Directions

  1. Combine broth and apple juice in a small non-reactive saucepan. Bring to a simmer; keep warm.
  2. Melt butter in a medium non-reactive saucepan over medium heat until bubbly. Add flour and cook, stirring, until flour mixture is browned, about 5 minutes. Gradually whisk in heated broth mixture, whisking until mixture is smooth.
  3. Reduce heat to low and cook, whisking frequently, until thickened, about 15 minutes. Remove from heat and stir in vinegar, parsley, sage, thyme and rosemary. Serve immediately.
