Sweet walla walla onions are on fully display in this impressive barbecued dish. We dress them with hot sauce, brown sugar, Dijon and Worcestershire for a creative side dish that pairs beautifully with grilled steak.

Yield: Serves 4.

  • 4 medium Walla Walla onions
  • 1/4 cup butter, melted
  • 2 tbsp packed brown sugar
  • 2 tsp Dijon mustard
  • 1/4 tsp Worcestershire sauce
  • 1/4 tsp hot pepper sauce
  • 1/4 tsp freshly ground pepper

  1. Peel onions; cut almost through each onion, forming 8 wedges.
  2. Cut foil into 4 pieces, each 12 inches square. Place an onion in center of each piece of foil.
  3. Combine remaining ingredients (melted butter through pepper) and drizzle evenly over onions.
  4. Leaving space for steam to build, twist foil loosely around each onion to enclose completely. Place foil packages off to one side of natural gas barbecue grid.
  5. Cook over medium heat for 35 - 40 minutes or until onions are tender.
