WARM BRANDIED CHERRIES

You don’t even have to go inside to prepare these brandy-spiked cooked cherries. Cook them up on your barbecue then serve them warm over ice cream for a delicious backyard dessert.

Yield: Serves 6.

WARM BRANDIED CHERRIES

Ingredients

  • 1/3 cup salted butter
  • 1/2 cup packed dark brown sugar
  • 1/4 tsp ground ginger
  • 4 cups pitted cherries
  • 1/3 cup brandy
  • Vanilla ice cream

Directions

  1. On a side burner of natural gas barbecue or directly on grid, cook butter, brown sugar and ginger in a heavy frypan over medium heat until mixture is thick and bubbly. Stir in cherries and cook just until heated through and slightly softened, about 4 - 5 minutes. Stir in brandy and boil 2 minutes.
  2. Spoon over ice cream and serve immediately.
