WATERMELON ICE CUBES

Give your favourite summer beverage a little kick with the addition of cubes of frozen watermelon purée. These cubes are particularly great served with ginger ale.

Yield: Makes 72.

WATERMELON ICE CUBES

Ingredients

  • 6 cups seedless watermelon chunks
  • 1/3 cup fresh lemon juice
  • 1/3 cup granulated sugar
  • 4 disposable plastic ice cube bags
  • Ginger ale

Directions

  1. Combine watermelon, lemon juice and sugar in a blender; purée until smooth. Using a funnel, pour watermelon mixture into ice cube bags. Tie tops of bags to secure. Freeze until firm.
  2. To serve, pop watermelon ice cubes into glasses and pour in ginger ale.
