WILD RICE AND DRIED CRANBERRY PILAF

A pilaf is a side dish that involves cooking rice or another grain in a flavoured liquid or broth. For this pilaf, wild rice is cooked in water then given a dip in a mix of chicken broth, dried cranberries and thyme.

Yield: Serves 8.

WILD RICE AND DRIED CRANBERRY PILAF

Ingredients

  • 8 cups water
  • 2 cups wild rice, rinsed and drained
  • 1 tsp salt
  • 2 tbsp salted butter
  • 1 cup finely chopped onion
  • 1 cup canned chicken broth
  • 1/2 cup dried cranberries
  • 1 tsp thyme, crumbled
  • 1 tsp salt
  • 1 tsp freshly ground pepper

Directions

  1. Combine water, wild rice and 1 tsp salt in a large saucepan. Bring to a boil over medium heat. Reduce heat and simmer, covered, until wild rice is tender, about 45 - 55 minutes. Drain and set aside.
  2. Melt butter in a frypan over medium heat. Add onion and sauté until light golden, about 7 - 10 minutes. Stir in broth, cranberries, thyme, 1 tsp salt and pepper. Bring to a boil. Cook until liquid is reduced by half, about 5 minutes. Add wild rice; cook until wild rice is heated through and remaining liquid is absorbed.
