WINE MARINATED LAMB CHOPS

Lamb chops cook up beautifully on the barbecue. This elegant grilled meat dish is first marinated in a blend of white wine, Dijon mustard, lemon and rosemary.

Yield: Serves 4.

WINE MARINATED LAMB CHOPS

Ingredients

  • 1/4 cup dry white wine
  • 2 tbsp fresh lemon juice
  • 1 tbsp Dijon mustard
  • 2 tsp chopped fresh rosemary
  • 1/4 tsp grated lemon peel
  • 1/4 tsp freshly ground pepper
  • 8 lamb loin chops, 1 inch thick

Directions

  1. To prepare marinade, combine all ingredients except lamb in a heavy zip-lock plastic bag. Add lamb and squeeze bag to coat lamb with marinade; seal bag. Let stand for 30 minutes.
  2. Meanwhile, preheat natural gas barbecue on low heat for 10 - 15 minutes.
  3. Remove lamb from marinade; discard marinade. Grill lamb over low heat on natural gas barbecue to desired doneness.
