WINTER SALAD WITH CRANBERRY VINAIGRETTE
Full of cabbage, dried cranberries, pumpkin seeds and red onion, this colourful mixed green salad is perfect for Christmas dinner. The dressing is a mix of cranberry juice, Dijon mustard and fresh cilantro.

WINTER SALAD WITH CRANBERRY VINAIGRETTE
Ingredients
- 1/4 cup cranberry juice
- 1/4 cup rice vinegar
- 1 tbsp liquid honey
- 1 tsp Dijon mustard
- 1/4 tsp salt
- 1/4 cup canola oil
- 1/4 cup chopped fresh cilantro
- 2 tbsp finely chopped green onion
- 8 cups mixed baby greens
- 2 cups shredded red cabbage
- 1/2 cup thinly sliced red bell pepper
- 1/3 cup thinly sliced red onion
- 1/3 cup dried cranberries
- 1/3 cup shelled pumpkin seeds
Directions
- To prepare vinaigrette, whisk together cranberry juice, vinegar, honey, mustard and salt until combined. Gradually whisk in oil until blended. Stir in cilantro and green onion.
- Combine remaining ingredients in a bowl. Add vinaigrette and toss to combine. Serve immediately.
