WINTER SALAD WITH CRANBERRY VINAIGRETTE

Full of cabbage, dried cranberries, pumpkin seeds and red onion, this colourful mixed green salad is perfect for Christmas dinner. The dressing is a mix of cranberry juice, Dijon mustard and fresh cilantro.

WINTER SALAD WITH CRANBERRY VINAIGRETTE

Ingredients

  • 1/4 cup cranberry juice
  • 1/4 cup rice vinegar
  • 1 tbsp liquid honey
  • 1 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/4 cup canola oil
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp finely chopped green onion
  • 8 cups mixed baby greens
  • 2 cups shredded red cabbage
  • 1/2 cup thinly sliced red bell pepper
  • 1/3 cup thinly sliced red onion
  • 1/3 cup dried cranberries
  • 1/3 cup shelled pumpkin seeds

Directions

  1. To prepare vinaigrette, whisk together cranberry juice, vinegar, honey, mustard and salt until combined. Gradually whisk in oil until blended. Stir in cilantro and green onion.
  2. Combine remaining ingredients in a bowl. Add vinaigrette and toss to combine. Serve immediately.
