ZESTY BARLEY PILAF

A pilaf is a side dish that involves cooking a grain in broth or flavoured liquid. We cook this hearty barley in a zesty blend of chicken broth and hot pepper sauce with assorted vegetables.

Yield: Serves 6-8.

ZESTY BARLEY PILAF

Ingredients

  • 2 cups chopped onions
  • 1 cup chopped fresh mushrooms
  • 2 tbsp salted butter
  • 1 cup pearl barley, rinsed and drained
  • 2 cups canned chicken broth
  • 1 1/2 tsp hot pepper sauce
  • 1/4 tsp salt
  • 1 1/2 cups cubed zucchini
  • 1 cup diced red bell pepper

Directions

  1. In a medium saucepan, sauté onions and mushrooms in butter until tender, about 5 minutes.
  2. Stir in barley and cook for 1 minute. Add broth, hot pepper sauce and salt; bring to a boil.
  3. Reduce heat; cover and simmer 20 minutes.
  4. Stir in zucchini and red pepper. Cover and simmer 15 - 20 minutes or until vegetables and barley are tender.
