ZESTY LEMON COD

Give these barbecued cod fillets a bit of zing with a zesty lemon and red pepper marinade.

ZESTY LEMON COD

Ingredients

  • 2 tbsp extra-virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp grated lemon peel
  • 1/4 tsp red pepper flakes
  • 1/8 tsp salt
  • 1/8 tsp freshly ground pepper
  • 1 lb (0.5 kg) cod fillets

Directions

  1. To prepare marinade, combine all ingredients except cod in a heavy zip-lock plastic bag. Add cod and squeeze bag to coat cod with marinade; seal bag. Let stand for 30 minutes. Remove cod from marinade; discard marinade.
  2. Meanwhile, preheat natural gas barbecue on medium heat for 10 - 15 minutes.
  3. Place each cod fillet on a piece of heavy-duty foil. Trim each piece of foil so it is slightly larger than fillet. With lid down, cook cod on barbecue until fish flakes easily with a fork, about 10 - 12 minutes per inch of thickness.
