ZESTY LEMON COD
Ingredients
- 2 tbsp extra-virgin olive oil
- 1 tbsp fresh lemon juice
- 1 tsp grated lemon peel
- 1/4 tsp red pepper flakes
- 1/8 tsp salt
- 1/8 tsp freshly ground pepper
- 1 lb (0.5 kg) cod fillets
Directions
- To prepare marinade, combine all ingredients except cod in a heavy zip-lock plastic bag. Add cod and squeeze bag to coat cod with marinade; seal bag. Let stand for 30 minutes. Remove cod from marinade; discard marinade.
- Meanwhile, preheat natural gas barbecue on medium heat for 10 - 15 minutes.
- Place each cod fillet on a piece of heavy-duty foil. Trim each piece of foil so it is slightly larger than fillet. With lid down, cook cod on barbecue until fish flakes easily with a fork, about 10 - 12 minutes per inch of thickness.
