Zucchini Citrus Marmalade

Wondering what to do with all your garden zucchini? Try making a marmalade, we added oranges for a burst a citrus flavour. Delicious on scones or biscuits.

Zucchini Citrus Marmalade

Ingredients

  • 3 medium zucchini
  • 2 large oranges
  • 1 large lemon
  • 6 cups granulated sugar

Directions

  1. Wash and coarsely grate zucchini; measure 6 cups and set aside.
  2. Cut off coloured portion of peel from oranges and lemon; chop peel finely and add to zucchini.
  3. Cut white pith off oranges and lemon and discard. Finely chop fruit and add to zucchini mixture.
  4. Add sugar and mix well; refrigerate for 4 hours.
  5. Place fruit mixture in a nonreactive Dutch oven. Bring mixture to a boil, reduce heat and boil to marmalade stage, about 30 minutes.
  6. Pour into hot sterilized jars, leaving 1/4 inch headspace. Remove air bubbles with a spatula. Wipe jar rims thoroughly. Seal and process in a boiling water bath for 10 minutes.
