Chicken, Apple and Brie Crepes

These delicious rich crepes are made with a savoury filling of chicken, thyme, apple, Swiss chard, and brie cheese. Serve them during the holidays or special occasions, such as Valentine’s Day. Spinach may be substituted for the Swiss chard in this recipe. 

Storage time: Up to 1 day in the refrigerator.

Chicken, Apple and Brie Crepes

Ingredients

  • 2 tbsp salted butter
  • 2 tbsp finely chopped shallot
  • 1/2 lb (0.25 kg) chicken sausages, casings removed
  • 1 Granny Smith apple, peeled, cored and diced
  • 2 tbsp chopped fresh thyme
  • 1/2 cup dry white wine
  • 4 cups torn Swiss chard, stems removed
  • 1/2 tsp salt
  • 1/4 tsp freshly ground pepper
  • 2 tbsp fresh lemon juice
  • 1 round (200 g) brie cheese, cut into 16 slices
  • 8 Simple Crepes *

Directions

  1. To prepare filling, melt butter in a large non-stick frypan over medium heat. Add shallot and sauté for 2 minutes.
  2. Add sausages and apple; cook, stirring to break up sausages, until sausages are browned and cooked through, about 5 minutes.
  3. Add thyme and stir to combine. Add wine and cook, stirring, until wine is almost evaporated, about 1 minute.
  4. Add Swiss chard and cook, stirring, until Swiss chard wilts. Add salt and pepper; stir to combine. Stir in lemon juice. Remove from heat.
  5. Place 2 brie slices down centre of each crepe. Top each with filling, dividing equally. Roll up crepes to enclose filling.
