THAI RED CURRY PORK PATTIES WITH CUCUMBER SALAD

These spicy pan-fried pork patties are flavoured with Thai red curry paste, fish sauce and cilantro. Cool them down with a side of our refreshing Cucumber Salad.

THAI RED CURRY PORK PATTIES WITH CUCUMBER SALAD

Ingredients

  • 1 lb (0.5 kg) lean ground pork
  • 1 cup thinly sliced green onions
  • 1/4 cup finely chopped fresh cilantro
  • 3 tbsp Thai red curry paste
  • 1 tbsp granulated sugar
  • 2 tsp fish sauce
  • 1 tbsp canola oil
  • Cucumber Salad
  • 1/2 cup Thai sweet chili sauce
  • Lime wedges, optional

Directions

  1. Combine pork, green onions, cilantro, red curry paste, sugar and fish sauce until well blended. Shape pork mixture into 12 patties, each about 2 inches in diameter. Cover and refrigerate for 30 minutes.
  2. Heat oil in a large non-stick frypan over medium heat. Cook patties in batches until browned on both sides and completely cooked, about 5 minutes per side. Cooked patties may be frozen for up to 1 month.
  3. To serve, use a slotted spoon and place a small amount of Cucumber Salad on individual serving plates. Top with a hot patty. Drizzle with chili sauce and garnish with lime wedges.
