Everyone needs a good waffle and pancake mix in their repertoire. Serve these breakfast treats with your favourite syrup.

Yield: Serves 6 - 8.



  • ​1 1/2 cups Pancake and Waffle Mix
  • 1 cup water
  • 2 tbsp salted butter, melted or oil
  • 1 tsp vanilla
  • 1 egg, separated
  • Maple or pancake syrup


  1. Place mix in a bowl. Using a spoon, make a well in centre of mix.
  2. Whisk together water, melted butter, vanilla and egg yolk until blended.
  3. Pour water mixture into well and stir just until combined. Do not overmix. Using medium speed of an electric mixer, beat egg white until stiff peaks form.
  4. Gently fold beaten egg white into batter.
  5. Cook in a preheated greased waffle iron according to manufacturer’s instructions. Serve with syrup.
