Here’s a great trick worth trying, courtesy of one of our chef instructors.
If you’re grilling several pieces of asparagus on your barbecue, you’ll know how hard it is to rotate them evenly, allowing both sides to cook.
The simplest solution is to use a kebab skewer (metal is best) to poke through the base of each spear of asparagus, one after the other, forming something that looks like a raft. Leave a bit of space around each piece so that the heat circulates around the asparagus.
This method allows you to hold the individual spears together in a single piece, which you can then flip on the grill in the same way you’d flip a burger.
While you’re at it, make sure you line up the spears on the barbecue so that they’re perpendicular to the grill, not parallel. Otherwise you could lose the top of a thin spear to the flames below.
