How to Roast Peppers on the Barbecue

To prepare peppers for roasting on the barbecue, toss them in a bowl with oil and salt, making sure they are fully coated.

Place the peppers on a hot grill and allow them to cook until they begin to char. When one side has become charred, rotate the pepper. Continue rotating the pepper until all sides are charred. This gives the peppers a sweet, smoky flavour. Once all sides are charred, remove the pepper from the grill and place them in a clean bowl.

Cover the bowl with plastic wrap for 10 – 15 minutes. Steam will build up in the covered bowl, causing the peppers to collapse. This makes the charred areas easy to remove.

Peel peppers under cold running water. Remove stems and cut peppers in half. Remove seeds and ribs. Use as directed in recipe.
