How to get Grill Marks
To get those perfect grill marks on your steak, start with a hot barbecue. Place your meat at a 45 degree angle directly on a hot spot. A quarter of the way through cooking, turn the steak another 45 degrees. This will create the crisscross grill marks. As the meat is cooking, do not touch or move the meat.
Once the steak has cooked enough on the first side, flip the steak over and again place it at a 45 degree angle. You will have to rotate the steak sooner on this side, as the meat is already warm and it won’t take as long to cook.
If you prefer to have the crisscross marks straight across the meat, follow the same method but place your steak at a 90-degree angle. When the steak is cooked to desired doneness, remove the steak from the grill with clean tongs, and place on a clean plate. Do not use the same plate the raw meat was on.
Place the side of the steak that was most recently on the grill face up, as placing the hot side down will trap the heat. Allow the steak to rest at least 5 minutes before serving.
